Clear Pineapple Chips Garnish

Video Tutorial for Clear Dehydrated Pineapple Chips by Alessandro Bruxel/ Home Chef Seattle. Happy to share with everyone my method to obtain clear/ glass like dehydrated fruits. My recipe includes an initial baking step prior to dehydrating the pineapple in the oven which is the secret to obtain a clear, translucent appearance compared to the normal dehydration processes. The time for the initial baking and dehydration can vary slightly depending on the fruit ripeness and thickness of the slices, so keep that in mind when trying this recipe. It is important for the fruit to have a translucent appearance after the initial baking before starting the dehydration. Chips should be kept in airtight container but they will eventually soften, they still taste great when soft but can be always returned to 175ºF-80ºC oven for a couple of minutes to be crisped up again.
