Indian Moong Dal Salad with Carrots - Vegan Kosambari Recipe
Kosambari is a vegan salad from South India made with moong dal, carrots, cucumber and Mint Leaves. It is also called hesaru bele kosambari, kosumalli, or koshimbir. Ingredients:
130g yellow Mung Beans (soaked for 2 hours)
1/2 Carrot
1/2 Cucumber
Mint leaves
1 red Onion
1-2 tbsp Lime Juice (or Lemon)
1/2 tsp Salt
For the Tadka:
1 tsp brown Mustard Seeds
some Curry Leaves
1/4 tsp Asafetida
1/2 tsp Ginger chopped
1 green Chili
2-3 tbsp Oil
