1 pound zucchini
2 small-sized carrot
½ cup dried wood ear mushrooms also known as black fungus
1 bunch vermicelli 50g optional, softened
3 stalks of scallions finely chopped
½ teaspoon of mushrooms seasoning plus more if needed
½ tablespoon vegan oyster sauce plus more if needed
a few dashes of white pepper
½ tablespoon toasted sesame oil
salt to taste and more for salting
5 frozen scallion pancake used Trader Joe’s brand
