Mortadella Sandwich with Pesto and Mozzarella di Bufala

Ingredients
For the Pesto (mortar and pestle required)
or you can use prepared pesto or a food processor to prepare
2 cloves garlic
kosher salt, to taste
1 cup fresh basil leaves
2 tbsp pine nuts
½ cup Parmigiano-Reggiano, freshly grated
¼ cup extra-virgin olive oil
4 panini rolls, sliced
350 grams mortadella, thinly sliced
Half a head of iceberg lettuce, shredded
2 balls (250 grams each) mozzarella di bufala, torn into pieces
300 grams provolone, sliced
Traditionally pesto is made in a mortar and pestle and I am a fan of tradition so this is how I make it. It really does add a different flavour when using a mortar and pestle, the basil and pine nuts really come out to play. When building your sandwich, add as little or as much as you want when it comes to the ingredients.
