Sourdough bread
This makes two loaves
1/2 cup sourdough starter
2 and 2/3 cups warm water
Mix and let sit for 30 minutes
Add in 2tsp salt I use Celtic or kosher
7 cups (give or take) all purpose flour. Knead dough until combined then start your stretch and folds. I stretch and fold 4 times every 10 minutes for an hour. Cover and let’s sit 6 to 8 hours. Drop dough onto a floured surface and shape into two loaves add to bannaton baskets wrap with damp cheese cloth and refrigerate overnight until ready to bake.
