500 grams of flour
100 grams of active sourdough (or a teaspoon of regular yeast)
280 g of water
20 g oil
10 grams of salt
Place the dough ingredients in a large bowl. Knead until you get a nice texture. Leave the dough to ferment. (If you want, you can put it in the refrigerator at this stage, the dough that rises slowly will be more delicious and healthy)
Roll out the kneaded dough with a rolling pin and divide it into 12 equal parts. Leave it to ferment on the tray.
Mix the oil, grated garlic, basil and spices in a small bowl. Brush on the dough. Sprinkle the grated cheese. Add sliced olives, onions and tomatoes. Bake in a preheated 200 degree oven until it turns pink.
