INGREDIENTS
500 ml Milk
80 g Caster sugar
25 g Cornstarch
2 Cinnamon sticks
Lemon peel
Sugar for the surface
4 Yolks
1 Vanilla pod
METHOS
Take the eggs and separate the whites, add the sugar and cornstarch to the yolks. Whisk vigorously to mix all the ingredients well. Take a saucepan and pour the milk, the lemon zest, the seeds of the vanilla bean and the cinnamon sticks. Bring almost to the boiling point and sift the milk very quickly over the egg, sugar and starch everything well and transfer to the pot in which you heated the milk.
Keep the flame to a minimum and whisk until it thickens, pour the cream into the cups and let it cool. Take the cane sugar and sprinkle the entire cream surface, then caramelize the sugar with the torch. Ottimo!
