Add cauliflower rice and water with a pinch of salt to a pot. Blast heat until it starts to boil, then close the lid, reduce the heat to low can let it simmer for 12 minutes. Chop up all vegetables. Combine sauce ingredients in a glass and mix. Heat up a pan to medium and add a bit of oil. Fry the zucchini for 3-4 minutes, then add onions and keep frying for 3 minutes. Now push vegetables aside, add some more oil, and then go in with the beef. Fry the beef on one side for 1 minute before mixing everything. Add in tomatoes, ginger, and minced garlic, and keep frying for about 20 seconds. Now add the sauce and give everything a stir. Close the lid and let it simmer for 1 more minute. Add cauliflower rice to the pan with the ground beef and mix.
