Stewed Chicken with potatoes, Sichuan flavor 川味红烧鸡
Stewed Chicken is such a hearty dish, especially for a cold weather. All the aromatics make it so flavorful. I used green Sichuan peppercorns, which are very floral. You may use the red Sichuan peppercorns. Enjoy!

2 potatoes
1 tbsp spicy bean paste (doubanjiang)
1 tsp Sichuan peppercorns
a few pieces of rock sugar (or regular sugar)
4 star anise
4 white parts of green onions
4 bay leaves
2 cups hot water
Shaoxing cooking wine (or chicken stock)
dark soy sauce
avocado oil or other oils
salt
