Simpsons head chef Nathan Eades, cooks a heritage tomatoes, native lobster with a tomato and coriander broth recipe. A tomato salad done three ways from Michelin-starred Simpsons in Birmingham. The first part of the dish is a cracker topped with natural lobster salad and coriander, the second part of the dish uses Westlands heritage tomatoes, dressed with white balsamic vinegar and rape seed oil. The final part of the dish is the tomato broth.
