- 2 cups basmati rice, soaked for 30 minutes

- 3 tomatoes, chopped

- 2 cups mixed vegetables (carrots, peas, and potatoes work well)
- Whole spices: 2 bay leaves, 4-5 green cardamom pods, 4-5 cloves, 2-inch cinnamon stick
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Fresh coriander and mint leaves for garnish
