Watermelon Gazpacho Recipe
Ingredients:
4 heaping cups of watermelon cubes
2 homegrown tomatoes, 3 if small, chopped
½ red onion, diced
½ English cucumber, or regular cucumber with seeds removed, chopped
1 red bell pepper, chopped
Juice of 1 lime
1 tsp. Salt, I use Real Salt
1 - 2 Tbsp. olive oil
3 Tbsp. red wine vinegar
1 small handful fresh basil, chopped
Garnish:
Feta cheese crumbles
Pistachios
Avocado chunks
Direction:
Place everything into a blender and liquify. If using a vitamix, don’t blend longer than 1 ½ minutes or your soup will cook and get hot.
You can also garnish with more watermelon chunks, chopped cucumber, olive oil drizzle, sour cream drizzle, yogurt drizzle, other nuts etc. Enjoy!
