Carrot cake has been around for hundreds of years, with decades of experimentation owing to the deliciousness that is the modern carrot cake. It originally started life as pudding in a carrot, with cream, eggs, raisins, sweetener, spices, and breadcrumbs (in place of flour). Many historians believe that carrots were used in cakes due to their natural sweetness, as sugar and sweetener were hard to come by.
