CHICKEN AND SAUSAGE GUMBO

1 cup flour
3 onions, chopped
2 ribs celery, finely chopped
1/2 red bell pepper, finely chopped
2 tablespoons minced garlic
Coarse salt
1/2 teaspoon cayenne
2 to 3 bay leaves
4 boneless, skinless medium chicken breasts, cut into bite-size pieces
Emeril’s Creole Essence Seasoning (recipe follows)
1 1/2 pounds smoked sausage, preferably andouille, sliced crosswise
8 cups chicken stock, homemade or store-bought
Cooked white rice, for serving
1 bunch scallions, thinly sliced
1/3 cup chopped fresh parsley leaves
