Foccacia recipe:
Ingredients:
600 g bread flour
120g sourdough starter
450 g of water
20 g olive oil
12g salt
For topping:
Olive oil
Peppers
Olives
Rosemary etc.
Preparation :
- Mix everything (except for 10 g oil and salt) in a bowl and knead for 5 minutes. Let it rest about 30 minutes. Add 10 gr of oil (that we separated before) and salt then knead for 5 minutes more until it reaches the window pane point .
-Let the dough rest on the counter for an hour.
- Do 2-3 sets of coil folds, each one hour apart. Then put it in the refrigerator.
- The next morning, transfer the dough to the greased pan. Let it proof for 1 hour .
-Drizzle with olive oil and dimple the dough.
Add your favorite ingredients and sea salt.
Bake at 200 degrees for 25 minutes.
