These meat balls are made using the chicken thigh which has more flavour and moisture than the chicken breast. The onion and garlic is first caramelised in butter for a sweeter more mellow taste. De-glazed with a little white wine, some Napolitana (Marinara) sauce with fresh basil and grated Parmesan cheese. Make extra as you’ll need seconds!
