This dessert is very popular in France. Everyone loves this dessert.

150 g chocolate (cacao 55%)
200g 30-35% whipping cream
2 egg whites
15g sugar
15 g water
10 g sugar
2 egg yolks
Chocolate, Cacao nibs
Chop and melt the chocolate
Whisk the cream
Whisk the water, sugar and egg yolks in a bowl to make a sabayon.
Make a meringue with the egg whites and sugar.
Warm the chocolate to about 60°C, then add the whipped cream.
Mix the sabayon and meringue in this order, place in a bowl and refrigerate for 2-3 hours.
Decorate with chocolate or cacao nibs.
*Consume the mousse chocolat with egg yolks within 2 days.
