Vegan! Banana-Nut Muffins with Crunchy Oat Topping (Recipe)

Vegan-ized my mom’s recipe :] Ingredients: 2 ripe bananas ½ tablespoon vanilla extract ¼ cup water 2/3 cups caster sugar ¼ teaspoon salt 1 cup cake flour 1 teaspoon double-acting baking powder ¼ teaspoon baking soda 1/3 cup chopped walnuts 1/4 cup oats ½ cup brown sugar ¼ cup flour 2 tablespoons olive oil 1. Preheat oven to 200°C and prepare pan (lightly spray cupcake tin with olive oil) 2. In large bowl, mash bananas well. 3. Mix into banana mixture vanilla, water, caster sugar, and salt. 4. Sieve
