Artolaganon bread from Ancient Greece

Both Athenaeus (2nd/3rd century CE) and Pliny the Elder (1st century CE) mention a Greek bread speciality called artolaganon, “bread cake“, which is prepared with milk, pepper, wine and lard or oil. There is no mention of the leavening agent, yeast or sourdough. I am using wine yeast from fresh grapes, a common leavening agent in antiquity, but feel free to use baker’s yeast or sourdough. (If you use baker’s yeast, skip the pre-dough and mix all ingredients right away.)
