Keto PB Blossoms

Back from a short hiatus to bring you this delicious recipe! I love anything and everything peanut butter, and these cookies are no exception. They’re just like the classic thumbrints that everyone knows and loves, but without the sugar! Here’s the recipe: - 1/4 natural peanut butter (choose your favorite! Just remember some have added sugar); - 1/4 cup melted butter; - 1 beaten egg; - 1/2 tsp vanilla; - 1 cup almond flour; - 1/4 cup coconut flour (add more if dough isn’t sticking well); - 1/3 cup powdered sweetener of choice (I used a monkfruit erythritol blend); - 1/4 tsp xanthan gum (optional). You can choose to hollow the middle and fill it with sugar free chocolate, or press a criss cross pattern into them with a fork. A little sprinkle of sea salt adds a bit of flavor as well!
